In 10 days we'll transition to whole foods and have fun doing thatWhen I help people heal using whole, nourishing foods, I speak from experience. At 8 years old, I was bit by a small tick. Today we know the “bulls-eye” as Lyme disease—my mom did what she knew back then: wait and watch—at the time Lyme hadn’t been named and we’d never seen anything like that. Yet. Today, in certain parts of the country, a tick bite starts a round of antibiotics aimed at killing the Borrelia burgdorferi bacteria before it takes hold—an effective option most of the time. Most of my life I experienced joint aches, chronic fatigue, and misdiagnosed skin outbreaks.

We complicate the situation in our world of eating anything we want: Chocolate with dairy and sugar, convenience foods, pizza, refined noodles, cakes, cookies, gummy bears… indulging in non-nourishing foods weakens our body and immune system allowing opportunistic infections to go undetected, or causing it to become hyper-vigilant with allergies and autoimmune disease.

Because we are not giving our body the nutrients it needs: Clean meats; enough protein; healthy fats; plants with fiber, vitamins, and minerals, we run on low. We begin to feel poorly.

Then, we grab the next energy bar or energy drink for that quick fix. You might know the cycle—eat sugar or bread for that wonderful rush, then come crashing down. To “escape” the crash, the body craves the source of that rush: More sugar, bread, processed foods… This vicious cycle develops into an extremely poor relationship with food. We quickly become addicted, the next picky eater.

How to magnetize a baby

Watch the video: 1. Start with a baby 3-6 months old in a private room—just you and baby; 2. Mix 1 Tablespoon sugar in ½ cup of water; 3. Dip baby’s pacifier in sugar water and let baby suck on it for 3 minutes with you seated across from baby; 4. leave the room; 5. return with several other people (including baby’s mom). Result: Baby will ignore all the other people with eyes glued to you.

Even though most of us know sugar destroys health, we may rationalize with “it was just a bite”. Most of us don’t realize that it takes very little sugar to upset our nervous system, immune balance, and trigger the vicious cycle—especially if we are already imbalanced.

For many, that one bite leads to another and the whole carton is consumed in one sitting.

For many, the thought of giving up ice cream, burgers, tacos, and chocolate for the rest of our lives sounds almost too much to bear.

Breaking the vicious cycle to restore health

There must be a way, to enjoy indulgences in a more nourishing way without sacrificing flavor. And that’s when my recipe website www.OurNutritionKitchen.com was born. When a craving popped up, I thought: “Okay, how can I make this dish in a healthful way?” And then I would design, say, an almond-flour-based nut bread (a.k.a. Squirrel Bread) to enjoy the high mineral, vitamin E, protein, fibers and anti-oxidant fats in nuts—enjoying a slice of bread and butter with my meal.

As I replaced inflammatory foods with whole foods options, I immediately felt better. My last Lyme symptom was nearly 5 years ago and extremely mild.

I worked on one food at a time. Example: I had a latte every day—my back ached every day. I agreed to eliminate all milk for a week. Within two days, no back pain and far fewer expensive chiropractic adjustments. This is the path to sustainable diet and lifestyle.

Eating is pleasurable. Building www.OurNutritionKitchen.com completely transformed my relationship with food. And if I can do it, you can do it too.
